I don't know about you, but we love these quick dishes. 


A dish rich in flavor, well-flavored and very quick with chicken breast that doesn't require long cooking. 


You can vary the vegetables and add, for example, fennel, turnip, Jerusalem artichokes or simply potatoes etc...



 Chicken Tajine with Olives

It can also be made with other types of olives and meats. Here's the simplest version, and even though it's an easy dish, there are a few things you need to do to make it a success.


You don't need to make your lemon confit separately, and you'll see that everything is included... A dish that can be served at your tables for your special occasions too.



Ingredients: serves about 5


1 large chicken breast or two small ones


1/2 untreated lemon for cooking


1/2 lemon juice


3 to 4 large carrots


200g pitted green olives


1 white onion (even better with spring onions)


3 to 4 garlic cloves or garlic powder


1 tsp yellow ras el hanout 


1/2 tsp turmeric


1/2 tsp ground ginger


white pepper 


Salt 


1 tbsp cornstarch


1 large glass water or chicken stock


1 drizzle oil 


1 tbsp finely chopped dried or fresh parsley.


Preparation: 


1- Cut the chicken breast into individual, not too thin, slices.


2- In a tajine or casserole dish, pour in the oil and heat over medium heat. Add the meat and brown on both sides to give it a golden color.


3- Blend the onion and garlic finely, add them and sauté with the chicken, adding a pinch of salt (not too much, as the olives are salty), white pepper, spices, lemon juice and the 1/2 lemon previously washed to obtain preserved lemon.


4- Wash, peel and slice the carrot, season lightly with salt and cook in water, just covered so as not to discard the cooking water. Add it to the chicken, followed by the olives, rinsed several times but not pre-cooked (not necessary).


5- Add the chicken broth and allow to simmer. Once everything is cooked, mix the cornstarch in cold water (about 3 or 4 tablespoons) and stir in.


6- For the sauce, if you manage to achieve the desired consistency, taste and adjust the seasoning and salt if necessary. This tagine loves parsley and lemon, so be generous...
