Kefta with Dried Fruits { Almond, Hazelnut and Cashew }

We can't get enough of these quick, easy and above all delicious little treats. We especially like them because we don't have to turn on the oven when it's hot, but also for their practicality and aesthetic appeal.

It's a real advantage to make your own marzipan, which is a real plus when it comes to managing the quantity of sugar. Alternatively, there's nothing to stop you using commercial marzipan, but be careful to use the right proportions to balance the whole.

Almond Kefta 

We like to garnish our tables at Aid or during Ramadan with this type of sweet to bring color and cheerfulness to our plates. 

You can choose dried fruit to suit your taste, or introduce candied fruit, apricots, dates, figs and more...

Ingredients: 

CLIC homemade almond paste

Natural yellow dye

Natural violet coloring

 Topping :

30 homemade chocolate shortbread cookies

350 g dried fruit mix (almonds, hazelnuts, walnuts and cashews) - your choice, even peanuts will work.

100 g dark chocolate, melted

100 g butter at room temperature

A little orange blossom to bring it all together if necessary.

Preparation of the marzipan CLIC

Preparing the filling : 

1- Finely blend the dried fruit and cookies, then add the melted and warmed chocolate. 

2- Add the butter and gather the mixture to form a dough that can be easily rammed and is not soft. If necessary, add a little orange blossom, but the dough must remain firm.

3- On a silpat or greaseproof paper with flowers, roll out the almond paste and cut out pieces using a cookie cutter of your choice (the number should be even), then place them on top of each other.

4- Roll out the filling to a thickness of about 1 cm, then use the same cutter to cut out half the number of marzipan pieces. If you're making 20 pieces, for example, you'll need to cut 40 of the marzipan and 20 of the filling.

5- Lightly moisten the marzipan with orange blossom water or food-safe glue, place the filling on top and put the 2nd part of the marzipan back on, moistening the underside to ensure it sticks well. Decorate with silver pearls and sesame seeds or anything else you like.
