Mhalbi with Dried Fruits {Cream of Rice}

A great classic of Algerian cuisine, a rice cream flavored with cinnamon and orange blossom, just exquisite.
For those who like it, el mhalbi can also be flavored with rosewater.
For the first evening, it's our famous mhalbi that invites itself to our table, a delicious traditional dessert that's a must for this blessed month of Ramadan.
Algerian Cream of Rice
This cream is served with ICI and ICI chriks, an Algerian brioche for the evening, just as they are for shûr.
Ingredients for 5 to 6 verrines: (150ml glass)
1 glass rice powder, freshly ground is best
1 glass or less of sugar according to your tolerance
8 glasses whole milk
1 glass water
1 glass orange blossom
1 sachet vanilla sugar
Cinnamon powder
Choice of dried fruit
Dried Fruit Mhalbi {Cream of Rice}
Preparation:
1- Blend all ingredients cold except orange blossom, cinnamon and dried fruit.
2- Bring to the boil over medium heat, stirring constantly with a whisk or spatula to prevent sticking.
3- Once the mixture has thickened, stir in the orange blossom and divide into verrines.
4- Leave to cool before placing in the fridge.
5- Garnish with whatever you have on hand, not forgetting a touch of powdered cinnamon.
