Algerian Brioche Kaak

Algerian brioche kaak gets its name from its shape. It's a fragrant brioche, crown-shaped like real Algerian kaaks, and devilishly good. It's melt-in-your-mouth, slightly crunchy and I can't tell you how it smells all over the house, including the neighbors'.
Brioche Algerian kaak
I discovered this lovely recipe when my friend Louisa posted it on my fb group. She suggested twice as many ingredients, and she was right. These brioches can accompany breakfast coffee, snacks and even outings.
Ingredients for about 9 brioches:
500g flour
75 ml oil
1 tablespoon milk powder
1 tablespoon dry yeast
5g baking powder
120g sugar
1/2 tbsp freshly ground aniseed powder
1/2 tbsp freshly ground melilot or fenugreek
1/2 case sesame seeds
250 ml warm milk
1 tsp salt.
Preparation:
Leaven :
1- Put the yeast with a teaspoon of sugar, 1 tablespoon of flour, add 3 tablespoons of warm water and mix, then leave for 20 minutes.
2- Pour the milk, oil and sugar into the bowl of the mixer, or into a large container if you're mixing by hand. Then add the flour sifted with all the powders and knead and mix with a hook. Then add the sourdough and knead for 5 to 10 minutes to obtain a smooth, elastic dough that's not too sticky.
3- Cover and leave to rise for 1 to 1? hours, depending on room temperature and season.
Deaerate the dough and shape into 130 g pieces. Roll out, stretch into a 35 cm sausage, then glue the two ends together and make incisions with scissors all around the circle or crown of dough.
4- Cover and leave to rise for a further 1 hour and 15 min. Then brush with the mixture of egg yolk beaten with strong coffee and milk, and sprinkle with sesame seeds. Bake at 210°C for approximately 30 minutes.
