Cauliflower Fritters in Sauce

Today, a trip back home is in order. Algerian cuisine is rich and varied, and above all seasonal.
My mother always cooked in season, she really cared about it and carefully chose the right vegetables to cook and share with us.
Especially with this delicious dish that I've loved since I was a child. I loved sitting next to my mom while she fried the cauliflower fritters and scooping up the crunchy fried crumbs.
Fried cauliflower
I wasn't a fussy child; I ate everything my mother prepared without a care in the world, and I appreciated her efforts with great admiration.
Family cooking was an emotional experience. Other variations are still on my old blog, but I haven't transferred them all yet - it's a huge job.
Tip for cooking cauliflower in water to avoid strong odors, use breadcrumbs and lemon or vinegar (Mom's tip).
Cauliflower Fritters in Sauce
Ingredients:
1 medium head cauliflower

2 chicken thighs or pieces of lamb
1 onion
2-3 cloves garlic
1 tsp ras el hanout
1/2 tsp cumin
1/2 tsp ginger
salt and pepper
1 tbsp ghee butter preferred
2 eggs
1 tbsp flour
3 cl milk
Fresh parsley
Salt
Pepper
1 lemon
Poultry stock or water
Cauliflower Fritters in Sauce
Preparation :
1- Start by cooking the cauliflower in salted water or steam. Drain and mash well with a potato masher or simply with a fork.
2- In a Dutch oven or casserole over low heat, brown the chicken pieces in a little butter and oil.
3- Add the chopped onions, grated or crushed garlic, pepper and salt. Add ras elhanout, cumin and ginger. Deglaze with stock or water and turn up the heat to cook the chicken, then cover and cook until the sauce is thick.
4- Heat an oil bath and mix the eggs, flour, parsley, salt and pepper on one side.
5- Dip the cauliflower florets in the egg mixture and fry in the hot oil. Cook until golden brown, then arrange in a dish, drizzle with sauce and garnish with chicken, lemon and chopped parsley.
They can also be eaten without sauce.
